For the past ten years, Paolo and Stella have been treating guests with the culinary delights of the gourmet restaurant Stüva Colani; from winter 2026, they’ll also be welcoming you to the elegant Hotel Chesa Stüva Colani, just as one would welcome friends into one’s own home. From morning till night, it’s a succession of flavours, experiences, and views in a refined and discreet atmosphere that leave you with one thought: I’m coming back.
To Madulain, one of Upper Engadin’s most charming villages.
Original timber ceilings above you. Larch floors beneath your feet. Walls clad in Swiss stone pine and spruce all around. And in the middle of it all, Paolo, Stella, and the Colani team: the heart, soul, and character of the Chesa Stüva Colani.
The kitchen is the heart of the Colani experience. At the stove: Paolo Casanova, who holds one Michelin star and 17 Gault&Millau points. In 2024, Gault&Millau and Bio Suisse named him the first Green Chef of the Year.
Open for lunch and dinner: Thursday to Monday
Winter season: 18/12/2026 to 29/03/2027
Special opening days: 29–30 December and 5–6 January
We are open every day and look forward to pampering you with delicious lunches, cakes and pastries in the afternoon, or a wild-herb aperitif. The 2024 Michelin Guide awarded it a Bib Gourmand for its excellent value for money.
Open seven days a week
Winter season: from 27/11/2026 to 03/042027
The Colani spa is small by design: few guests at a time, complete tranquillity.
A rejuvenating sauna and hammam, a reviving ice-cold plunge pool, a restorative whirlpool, and a hushed relaxation area with a salt wall.
Open every day from 2:00 p.m. to 8:00 p.m.
Snow settles on the roofs of the Engadin houses. The River Inn turns to ice. And silence echoes between the mountains. This is the best time to experience the character of the valley: on skis, on snowshoes, or on foot along the riverbank. Paolo and Stella know every corner of the valley, and they’ll be ready to welcome you back to the warmth of the spa and a beautifully laid table.
Hiking trails climb to 3,000 metres above sea level. The lakes mirror the blue of the sky. And the light lingers over the valley until late in the evening. Paolo loves to roam this landscape in search of wild herbs, mushrooms, and other ingredients for his dishes. Step outside and discover the scents and colours of unspoilt Upper Engadin.
